For years, I looked for a tasty, low-sugar banana bread. I substituted honey for sugar, I replaced the all-purpose with whole wheat… yet I could never achieve the right taste or consistency. Then one day I discovered this recipe. It’s perfect. Whole wheat, no sugar, healthy oil. It turns out perfect every time. And so delicious. We just had a loaf with our hearty chicken wild rice soup.

Honey Whole Wheat Banana Bread
makes 12 slices
- 1/3 cup coconut oil
- 1/2 cup honey
- 2 eggs
- 1 cup mashed bananas
- 1 tsp vanilla
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 3/4 cups whole wheat pastry flour
- 1 tsp baking soda
- 1/4 cup hot water
- 1/4 cup chocolate chips, optional
- 1/4 cup chopped walnuts, optional
