Looking for a new recipe for whole grain muffins?
I found this recipe on the back of a package of Bob’s Red Mill wheat bran and tweaked it just a bit. These are soft, hearty muffins full of whole grain goodness. You can find the original recipe here.
Whole Grain Muffins
makes 12 muffins

1 cup wheat bran

1.5 cups whole wheat flour

1 tsp baking powder

1 tsp baking soda

1/2 cup pecans or walnuts, optional

1 cup milk
-
1/2 cup honey
-
3/4 cup applesauce
-
2 tbsp olive oil
-
2 eggs, beaten
1. Preheat oven to 400°.
2. Combine wheat bran, flour, baking powder, and baking soda. Stir in nuts if desired.
3. In a separate bowl, blend the milk, honey, applesauce, oil, and eggs.
4. Add wet ingredients to dry. Stir until just moist.
5. Pour into greased muffin cups and bake for 15-20 minutes, or until they test clean with a toothpick.
